I found these words to ring true. A lesson for all of us making a living behind the stick.

"No matter how great a cocktail you make is, if the guest doesn't like it, then there's no point."

It seems simple enough, yet during this age of the cocktail revival, over-thinking drinks is something all of us need to be wary of. After all, we are in the service industry. Stroking our own egos with over the top cocktails won't do us any favors with the every day consumer simply looking for a well balanced drink. So as we push forward with reviving classics and putting a modern twist to them, let's also remember the importance of slowly educating our consumers along the way. After all, we're in business for them.

Cheers!

Vegas Results

Good evening friends and family!

We have returned from a great few days, safe and sound back in SoCal. Here's a quick recap of my trip to Las Vegas for the 2011 Bombay Sapphire Most Inspired Bartender Search.

The nation wide competition started in 36 or so markets around the country with nearly 50 competitors winning their respective regions and moving on to the event in Las Vegas. Once there, we were broken up into groups of five and went through a photo shoot with GQ magazine. Then we were shuttled over to Caesar's to compete in the first stage, where we presented the same cocktail we won our respective markets with. That night, the judges deliberated on who to advance to the Top 10.

The next afternoon at The Madalay bay, we sat down for an amazing luncheon and a great presentation by the esteemed Tony Abou-Ganim. Following the luncheon, we went back to The Wynn to prepare for the night's final. All competitors gathered at an amazingly set up Club XS and anxiously awaited the announcement of the chosen 10. After two competitors were called, I heard my name! We were presented with a fun but very difficult format for the final. For those of you familiar with Iron Chef, it was very much the same. We were given a surprise ingredient, then given 12 minutes to conceive a cocktail inspired by our home towns.

The secret ingredient we were given was a brand new liquor called Bombay Sapphire East. I developed a take on a mule, calling my drink the Gateway to the East. The idea playing on the name of the gin as well as San Diego's position as a naval town that has been important in the Navy's presence in the south pacific and Asia. I incorporated yuzu, lemon bitters, fresh pressed oranges (to represent California), and of course the gin and ginger beer. It was an exciting but nerve-racking event for sure! The room was full of the best bartenders in the country and four very highly esteemed judges. And oh, then there were the high stakes! The winner was to receive the cover of a special Men-of-the-Year GQ edition, a spread, and a trip to London to represent the US in the world finals.

I did not quite make the Top 3, but I walked away very pleased to have made it as far as I did. I met many great bartenders and made some great contacts along the way. I heard a life changing and very inspiring talk by Tony Abou-Ganim, and most importantly, picked up some valuable experience on the National level. I'll be ready to head back next year and try to bring a title back to San Diego!

Cheers!

I'm Headed to Nationals!

Greetings friends! Well, the time has finally arrived. Fernanda and I will be taking off from San Diego in a few hours and jetting off to Las Vegas for the Bombay Sapphire/GQ magazine Most Inspired Bartender competition. As the San Diego representative, I'll be looking to bring home a National Title to SoCal! Once in Vegas on Sunday morning, I will head over to a photo shoot with GQ. Then along with 51 other competitors, we will spin our tasty libations for the world Bombay ambassador and his team of judges at Pure in Caesar's Palace. The top 10 will move onto the finals held Monday night at Club XS in The Wynn. The winner will be rewarded with the cover of GQ's Man of the Year magazine and represent the U.S.A at the world finals in London! So as I shove off for the most exciting event of my career, I raise the proverbial glass and offer a toast: To those of you chasing your dreams, believe and you shall already be a success!

Cheers!

A Review of Burlap....

Hey all!

So I came across this review of Burlap and thought I would share it with all of you . It gives you just a glimpse of where I've been spending so much of my time lately. While there really isn't much more than a brief mention of my cocktails, it does offer some insight into the awesome food Brian and Ben are cooking at Burlap. Let me know what you think!

Big Win!!

Hello friends!

So some exciting news to share with you. I just received word that I have been chosen as the winner of the San Diego 2011 Bombay Sapphire/GQ magazine Most Inspired Bartender competition held last week. I will be moving on to the National Competition to be held in Las Vegas next month!! I won with a cocktail called the Simmon-tini, against a very fierce and competitive field of great San Diego bartenders. It's a wonderful moment for what I've been trying to accomplish here in the great cocktail culture of San Diego. It seems like there are some exciting times ahead!!

Bombay Sapphire Competition

Greetings Friends!

Today I'm off to compete in the Bombay Sapphire competition to be held in Pacific Beach, CA at Tower 23! I competed in this event a couple summers ago, with an exciting cocktail that used liquid nitrogen. It was smoking fun! The judges were impressed, but I didn't come away with a win. So for today, I'm going to tone it down a bit and make a slightly more user friendly cocktail. For those of you close to what I've been doing lately, you'll know that I'm on a pretty big Barolo Chinato kick, so you'll see some of it in play with today's cocktail. And of course, I'm going to have to throw some fire into the mix somewhere in there!

Things have been very busy for me here in San Diego as we have just opened our new restaurant, Burlap. Anyone associated with opening restaurants will know that it is a serious time commitment and rather stressful. So the posts will resume again shortly as I try to get my legs back under me. Until then, Cheers!!

Christmas Eve-like excitement!

Hey Peeps!

So I wanted to jot a quick post before turning in for the night. I'm down to three shifts left at Searsucker, which means that Burlap is right around the corner! Tomorrow morning starts the staff training, nice and early at 10 am. While that's going on, I'll be headed out on a shopping spree with Chef Malarkey for all our bar goods. Talk about exciting! I've never been one for regular shopping, but when it comes to bar goods....and it isn't my money....I'm all in!

We are now exactly two weeks away from our Opening Day After Party, more on that to come. Stay tuned....exciting things on the way!

Cheers!

Bitters baby!

Hey all!

So the day before the 4th festivities and it's a day of fun and research! I woke up this morning and headed out to pick up a 6th grade Promotion gift: a brand new bike for my daughter, Ericka! It's a sweet vintage Fernet Branca beachcruiser (yes, I love Fernet!). She's pretty stoked with her new wheels, and I have to admit I'll be riding it plenty too!

So on to the research! I have two types of bitters currently steeping in the kitchen. An Orange Bitters and a Chinese 5 Spice Bitters. Today, I'm headed out to pick up a few more ingredients to get a couple more flavors going. I'll be spinning up a Grapefruit Bitters and some variation of a Cherry Vanilla. Should be fun!

On a side note, Burlap training starts this coming week, and we are less than three weeks from opening!

Happy 4th everyone!
Cheers!

A Bartender's Night Life...

Hey there party people! Did you ever wonder what it would be like to be a bartender? How about what our hours are like, and maybe what we do after work? Well on my ride home tonight, I looked down at the clock and wondered what people with 9-5 jobs would be doing at that moment. Considering it was 4 am PST, pretty much every one I know in San Diego is asleep. But for those of you living in the midwest, east coast, or even my friends across the pond in Britain, your day could just be getting under way.

For me, I drove the long 20 miles home with hardly any traffic. A nice break compared to my ride to work and all the weekend traffic at 5pm. I stopped off at CVS and had a conversation with my late night buddy. It's kind of funny- the relationships you forge when you are awake at weird hours. As soon as he saw me, he remarked about how he hadn't seen me in a couple weeks. I thought that was cool. We chatted for a minute about his dad and I grabbed a couple gallons of milk for my little guy. My son can take down bottles with the best of them! I said good-bye to my late-night friend Tyler and headed off to deposit some cash.

The Bank. Now that's a whole other crazy adventure for many bartenders. Imagine if you were paid daily, rather than in a paycheck? Budgeting is a little tricky (<-----Read:impossible!), and as you belly up to the counter with two fists full of ones, the bank tellers think you must be an exotic dancer (<-----Read:Stripper!!) Luckily for me tonight, at 4 am, it's just me and the machine. Then it's off for home and a late night convo with my lady. By now, she's been asleep for half the night, and too much convo could find her waking up for her day way to early. So I usually sit down to the computer and catch up on the day's emails, FB, Blogger :), etc. before getting ready to hit the pillow. Most people I know in this industry usually need at least an hour or two after work to wind down. Imagine getting home from work and having to go straight to bed?!

So, I hope this sheds just a little light on how a bartender's world might be a little different than yours. Does anyone else work strange hours or live life just a little off beat from the rest of the world?

Until next time....

Cheers!

Monday Fun Day!

Greetings!

How is everyone today? I'm a brand new man after some serious sleep last night! We had a great time at the 3rd annual San Diego Spirits Festival. So great that Fernanda needed the car ride home to rest her eyelids! :) I have some photos I'll work on posting soon. In the meantime, Monday has arrived and it's time to start focusing on Burlap as well as an afternoon of education. The USBG (United States Bartending Guild) is having it's monthly meeting this afternoon at URBN. We will be learning about gin from some industry experts. I'm looking forward to it! And then tonight I need to spend some time working on my back bar liquor selection. Burlap is approaching quickly! That's it for now...

Cheers!

Quick turn-around

Sometimes as a bartender, sleep becomes an inconvenience. Especially in my situation, where I have family waiting for me and things to do. Today after a long week and a late night last night, we are up early after a quick 5 hours of sleep to head downtown to the San Diego Spirits Festival. It will be my first time to the event and I'm looking forward to it! We'll see a bartending competition and I'm sure many of the vendors that I deal with on a weekly basis. The babysitter just left with the kids, and now I'm going to hurry up and wait (per usual) for Fernanda to find something to wear. The sun is shining and it looks like its going to be a great day, despite a quick turn-around!

Cheers!

Another Long One

Time to sling....

Hey there.. Today  was another long day of all things bar related. Started with some work at a research company downtown. I was asked to take part in a study put on by a vodka company. They brought in three of us bartenders from around San Diego for a 90 minute discussion on the current trends of vodka sales and drinkers. The other two bartenders where from establishments that are nearly polar opposites of Searsucker. A gay bar in Pt.Loma and a lesbian bar in Hillcrest. Talk about different perspectives! Bartending is a broad field that encompasses many different types of people. The moderator compared us to Anthropologists. Not quite sure if that sticks or not, but after hearing these other two bartenders talk simply about the different trends they see in their places made me realize that what is true for me might not be true just across town. Good lessons learned!

Then it was on to the restaurant two hours early for meetings. A lengthy tasting for some potential new product at Burlap and then a sit down with my boss. All before my shift! Finally home around 3:30  am, and now at 4:30, it's time for bed! Big day tomorrow...so until then...

Cheers!

The Beginning

I’ve been wanting to get this blog off the ground for several months now. That desire has increased over the past several weeks as my work has drawn me deeper into the world of which I want to blog about. Of course like many others, finding the time to devote to writing is difficult. The busier I am the more I have to write about, and therefore the less time to write! Conundrum anyone??
So here we go with what I hope will be a fun and revealing journey into all things libation oriented. Stay tuned…Cheers!
